Hello and welcome to our first blog post ever! We are so excited to share our vegan culinary adventures with you. For years, we wondered if we should take the plunge and start writing. As we celebrated Earth Day’s 50th Anniversary today, it felt like the perfect time to take the leap and write our first post! A recipe for vegetable soup. Earth Day provides us a special day to root down to nature and embrace the true beauty around us. It is also a time for deep reflection on the main reason we adopted a vegan lifestyle – to be kind. To be kind to all with specific consideration to environmental protection, health consciousness, sustainability and animal welfare.

Cooking with Limitations

This pandemic is leaving some serious and diverse implications to our world. One minor such implication being cooking limitations. You may have found yourself in the kitchen more often as a result of this pandemic, with limited grocery store exposure and inadequate access to fresh produce. This can be a very daunting task. We are here to share with you how we are navigating through this. We hope this vegan recipe will help comfort you and your family in such tough times. Hopefully this candidness connects with you, teaches you, or even inspires you.

So, what happened to us on Earth Day morning? What happened that had us feeling a bit hopeless? There was a strong desire to cultivate a vegan recipe. One that felt grounded and earthy. However, the proper fresh produce was lacking in our fridge. We opened our minds and palettes to our pantry and to our freezer section. A hearty, vegan and earthy vegetable soup quickly became the perfect choice.

Using What You Have

We are so happy to report that a few canned and frozen substitutions turned out wonderfully delicious. So good, our two year old added it to his favorite menu item list! A vegan soup recipe a two year old loves! That makes our hearts sing. To start making our Earthy Vegetable Soup recipe, first pull out all of the ingredients you have from your fridge, freezer and pantry. We’ll share some substitute options below!

Earthy Vegetable Soup Ingredient List

  • Pantry Spices: Salt, pepper, turmeric, parsley
  • Vegetables & Hearty Elements: onion, garlic, celery, potatoes, carrots, peas, corn and tomatoes
  • The Other Stuff: olive oil, water, vegetable broth

How to Prep: Cut, Mince & Chop

  • Dice a medium sized onion. We prefer to use white onion. 
  • Mince garlic: we were out of fresh garlic, so we used already minced garlic from the fridge.
  • Chop up the celery, potatoes, carrots and tomatoes to your liking. We chop them pretty small to accommodate our 2 and 4 year old sons.
  • Find some peas and corn: these can be fresh, canned or frozen. Depending on what you have, they will be put into the pot at different times. 

Start Cooking!

  • Heat the olive oil in a large saucepan over medium heat.
  • Add in the onion and garlic and sauté until slightly browned.
  • Add the pantry spices into the pot and cook until fragrant. Our favorite cooking tip: always cook your spices first!
  • Next up is the celery, potato, and carrot with 1/2 cup of water. Cook until soft. 
  • Add in canned peas and corn and cook for a few more minutes. If you are using frozen peas, carrots or corn: cook them separately and them in here. If the carrots are canned, add them in here too.
  • Lastly, place tomatoes and vegetable broth in the pot.

Simmer & Enjoy

  • Lower the heat and simmer for 2 hours. After 1 hour, add in another cup of water.
  • Taste it to ensure the spices are to your liking. To tone it down, add water. To spice it up, add in paprika and/or red chili powder.
  • What pairs well with our vegan Earthy Vegetable Soup? In our family, we each pair it with a different item – bread, crackers, tortillas or simply on its own!
