
Fall is absolutely our favorite season. We just love fall flavors and traditions. Our 4-year-old has been so greatly looking forward to making Halloween cookies. We purchased some festive cookie cutters so him and his younger 2-year-old brother could have lots of fun helping!
We played around with different flavors and are absolutely obsessed with this recipe. These seriously tastes like a bite of Fall. We are slightly embarrassed to admit our family ate all of these in one day!
Cookie Ingredients
1 1/2 cups all-purpose flour
3/4 cup vegan butter, melted
1/2 cup sugar
1/2 cup brown sugar
1 tablespoon vanilla extract
1/2 tablespoon cornstarch
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons pumpkin pie spice
1/2 teaspoon nutmeg
1 teaspoon ground cinnamon
3 tablespoons oat milk
The Cookie Prep
Melt the butter
Heat the oven to 350F
Bake the Cookies
Place cookies on lined baking sheet
If you are making fun shapes, you can do that step now.
Bake for 10-12 minutes at 350 degrees F.
Allow to cool for 5-10 minutes before frosting.
Frosting Ingredients
1/2 cup vegan butter
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
1/4 teaspoon nutmeg
1/4 cup oat milk
3 cups powdered sugar
Finish the Frosting & Cookies
Melt the butter and add into a medium mixing bowl (you could use the one you did for the cookies).
Add the vanilla and all of the spices.
Add in oat milk
Slowly mix in the powdered sugar
Mix really well until clumps are removed and you have a nice thick frosting consistency
Frost the cookies!
