Happy Cinco de Mayo! Most of us aren’t celebrating like we usually would today, given the current pandemic we are living through. So, we are doing our best to make all of our favorite dishes today for our special at-home fiesta. One of the best things about tacos is that there are so many different ways to make them. In fact, we make them differently every time. Only exception being these delicious healthy vegan tacos. They are so delicious, we could eat them daily!
With our tacos, we usually make our Spanish rice, our tortillas, and our guacamole to go along with these amazingly healthy vegan tacos. We hope you enjoy these healthy vegan tacos, which our kids even love!

Healthy Vegan Tacos Ingredients
Spices: minced garlic, salt, pepper, parsley, fresh cilantro
The Good Stuff: red bell pepper, green bell pepper, yellow squash, onion, mushrooms
The Other Stuff: olive oil
Dice the onion
Mince the garlic and cilantro
Chop the bell peppers, squash and mushrooms

Or grab some from your fridge if you recently procured some from the store. We recommend warming them up.
In a large saucepan, heat the olive oil.
Add in the onion, garlic and spices. Sauté until fragrant and browned.
Then add in the bell peppers. Once bell peppers soften, add the squash. Once squash soften, add the mushrooms.
